Cheesy Potato WedgesIngredients:
4 Russet potatoes 1/2 pound butter 1/3 cup Parmesan cheese 1/2 teaspoon garlic powder 1 teaspoon season salt parsley |
Wash potatoes and cut each into 8 wedges. Melt butter in Dutch oven and coat potatoes on both sides. Arrange in Dutch oven in a circular pattern. Mix cheese and spices and sprinkle over the potatoes. Sprinkle with parsley flakes and bake with 1/3 of the coals on the bottom and 2/3 on top until potatoes are easily pierced with a fork (about 40 minutes at 350 degrees).
Try using red potatoes or different seasonings to mix it up a little. To make this a meal, we cubed up a little under 2 pounds of sirloin and browned it in the oven with butter and seasonings. Then added the rest of the ingredients an cooked for about 30 minutes with red potatoes.

Meatball Monkey BreadIngredients:
Bread dough: 1.5 cups warm water 1 tablespoon instant yeast 2 tablespoons sugar 3.5 cups flour (plus extra for making the rolls) 1/2 teaspoon salt Filling: 1 pkg frozen meatballs 2 cups shredded mozzarella cheese Sliced peporoni Topping: 3 tablespoons melted butter Garlic bread seasoning or make your own (Parmesan cheese, garlic, italian seasonings, etc) Marinara sauce for dipping |
Directions:
For the dough, mix all ingredients in a large bowl or electric mixer and knead for 3 minutes. Cover and allow to rise for 30 minutes.
Prepare your dutch oven (or liner) by oiling it with butter, oil, spray, etc. For the preparation area, use a pastry mat or smooth clean surface with plenty of flour. Take small pieces of the dough (about the size of a walnut) and flatten out into small disks. Place a pepperoni slice, cheese and a meatball on the disk. Fold the sides of the dough up over the filling. You may want to roll it in your hands to make sure that it's sealed up. Place inside the dutch oven. Once you have filled the oven, brush the garlic butter mixture over the top.
