Mountain Man Breakfast
Ingredients:
1.5lb bacon 1 bag Potatoes O'Brien |
20 eggs
2c shredded cheddar cheese Picante sauce |
Heat a 12" Dutch oven using 18-20 briquettes bottom until hot. Cut bacon into 1 inch slices. Add to Dutch oven and fry until brown. Add potatoes, cover and bake using 10 briquettes bottom and 14-16 briquettes top for 30 minutes. Scramble the eggs, add 1 cup of cheese and pour over the top of the potatoes. Cover and bake another 20 minutes. Rotate oven/lid heat. When eggs are done, cover top with cheese and replace lid. Let stand until cheese is melted.
You can speed up your cook time by cooking bacon and potatoes in your oven on top of a gas stove.

Biscuits and Gravy
Ingredients:
2 cans large flaky biscuits 1 lb breakfast sausage 4 tbl flour 1/2 tsp salt |
1/2 tsp black pepper 1/2 tsp garlic powder 3 c milk 2 tbl melted butter |
Start heating dutch oven to about 400 degrees and add a small amount of oil or butter to the bottom of the oven.
Brown sausage in separate pan until cooked through.
Cut 1 can of biscuits into quarters and place in bottom of oven. Cover and cook for about 10 minutes.
In a small bowl mix together flour, salt, pepper and garlic powder and sprinkle over cooked sausage. Stir until completely absorbed. Add milk and stir on medium heat until it comes to a simmer. Reduce heat to low and continue stirring while gravy thickens (about 5 minutes). Cut the other can of biscuits into quarters.
Pour gravy over biscuits and place remaining biscuits on top. Cover and cook for about 15 minutes. Brush with melted butter if desired before serving.
We suggest doubling the sausage and gravy as the recipe as it stands was a little biscuit heavy. Maybe double, add 1/2-3/4 to oven and hold the remainder in reserve for serving.
