Dutch Oven Dinners

Layered Taco Pie

Ingredients:
1.5 lb Ground Beef
8 oz Taco Sauce
4 Large Corn Tortillas

8 oz Cheddar Cheese
8 oz Tomato Puree
Preheat Dutch oven to 325 degrees.
Shred cheddar cheese.  Combine taco sauce and tomato puree.  Brown ground beef, remove and drain.  Place 2 tortillas in Dutch oven. Pour 1/2 of ground beef on tortillas.  Pour 1/2 of taco sauce over beef.  Place 2 more tortillas on top.  Pour rest of beef.  Pour rest of taco sauce. Sprinkle the cheese.  Cover and bake until cheese is melted.
For this recipe we used 6 small tortillas and browned the ground beef at home to cut down on cooking time and clean up.  We are also thinking that next time we will mix the precooked grounded beef, tomato puree and taco sauce for a more even mixture.

Mountain Dew Chicken

Ingredients:
1/2 lb Bacon
1 c Flour
5 Chicken Breasts
10 Carrots
1 lg Onion
5 Potatoes
12oz can Mountain Dew
1/2 c Shredded Cheddar Cheese

Chop bacon into 1" pieces.  Dice vegetables.  Cut chicken breasts in half lengthwise.  Fry bacon in dutch oven until crispy.  Remove bacon from dutch oven but leave grease.  Shake chicken breasts in 1 gallon zipper bag that has the cup of flour to coat. Cook in bacon grease to brown, about 5 minutes, turning a couple times. Pour vegetables, bacon, and Mountain Dew on top of chicken. Cover with lid and cook at 350 degrees for 45 minutes with 3/4 of coals on lid. Using tongs or fork, lift chicken breasts so they are resting on top of vegetables. Sprinkle cheese over the chicken. Cook an additional 10 to 15 minutes.
Serves 6 to 8
Start your cooking on the stove.  Put the Dutch oven on the stove and start cooking the bacon while your coals are getting ready.  Continue with browning the chicken and adding the remaining ingredients until the coals are ready and place over the coals.

We put in extra potatoes, a second can of Mountain Dew (we used Mountain Dew Throwback) and extra chicken.  In hindsight we should have also increased the amount of bacon, onion and possibly cheese as the extra potatoes took away some of the flavor.  That being said we had no left overs.

Teriyaki BBQ Chicken

Ingredients:
6-8 boneless, skinless chicken breasts
18oz bottle of Teriyaki sauce
18oz bottle of BBQ sauce
12oz can of Sprite

If desired cut chicken into halves or other serving size.  Place chicken in Dutch oven and add remaining ingredients.  Cover and cook for 30-35 minutes at 350 degrees.  Serves 6-8

Mexican Bubble Pizza

Ingredients:
1.5lb lean (at least 80%) ground beef
3/4 water
1 can (10.75oz) condensed tomato soup
1 pkg taco seasoning
1 can Pillsbury Grands biscuits
8oz shredded cheddar (or blend) cheese

Brown and drain ground beef.  Place in Dutch oven adding water, soup and taco seasoning.  Mix well.  Cut or tear biscuits into pieces and place in mix.  Gently mix biscuits into beef mixture.  Heat Dutch oven to 375 degrees and cook for 30-40 minutes (until tops of biscuits sticking out of mix turn golden brown) and add cheese to top.  Cover and cook an additional 8-10 minutes.  Serves 6-8

Optional toppings: shredded lettuce, sour cream, green onions, black olives, guacamole, diced onion, tomatoes, etc.

Baked Ziti

Ingredients:
1 pound ziti (or Penne)
1 small (1-2lb) bag frozen meatballs
1 jar (25oz) pasta sauce
1 small bag of diced onion and pepper mix (optional)
1 8oz package shredded mozzarella
Boil pasta until al dente (about 8 minutes), drain and set aside. Place meatballs in dutch oven and start warming over medium heat. You can cut up the meatballs if desired once thawed. Add onion and pepper mix if desired and cook until crisp. Add cooked pasta, sauce and half the cheese. Cover and heat for about 30 minutes with 16 coals on top and 8 underneath. Rotate oven and lid every 10 minutes. Remove lid, add remaining cheese and cover until melted.

Dutch oven pizza bake

Ingredients:
1 pound diced rotisserie chicken
1 8oz package pepperoni
1 16oz bag italian blend cheese
3 packages of crescent rolls
​1 15oz jar pizza sauce
Line bottom of oven with unrolled crescent dough filling all empty space.Spread some sauce over the dough. Add chicken and pepperoni and add the remaining sauce. Cover with cheese. Spread remaining unrolled crescent dough on top, covering the entire surface. Bake for about 30-40 minutes at about 350 degrees.
